There is nothing better than eating cakes and watching a bonfire and fireworks. If you are going to have a bonfire at home then how about making these delicious cakes? They are delicious served slightly warm, so that the jam is gooey. These are called bonfire cakes because they look something like bonfires. (OK, so they look like bonfires if you squint!) If you are feeling really adventurous you can get the kids to help you make these, they are fun and easy to make - just make sure they don't do anything they shouldn't! The quantities shown in this recipe make 8 cakes.
Ingredients
- 175g Flour
- 1 tsp Baking powder
- 75g Sugar
- 75g Butter
- 1/2 tsp Vanilla essence
- 1 Egg, beaten
- 8 tsp red Jam (ideally strawberry or raspberry, it's the red colour that makes it look like flames!)
Method
- Mix the flour, baking powder and sugar together.
- Rub the butter into the flour mix to form breadcrumbs.
- Add the egg and vanilla essence to the mixture, and stir to form a thick dough.
- Spoon the mixture onto a greased baking tray to form 8 mounds.
- Use the end of a wooden spoon to create a dimple in the top of each mound.
- Divide the jam between each of the mounds, putting it into the dimples.
- Place the baking tray into an oven at 200 degrees C for 15 minutes.
- Remove the cakes from the oven and leave to cool on a cooling rack.
