Biscuits are fantastically easy to make, and they seem extra special when they have a filling. These biscuits are plain with a flavoured cream. You can either make them all with the same flavour, or vary the flavours of the creams, the choice is yours! The quantities shown here make 10 biscuits.
Ingredients
- 150g Butter
- 50g Caster sugar
- 150g Flour
- 1 tsp Baking powder
- 100g Icing sugar
and one of the following flavourings for the cream:
- A few drops Vanilla essence
- 1/2 tsp Cocoa powder
- 1 tsp Lemon / Orange juice
Method
- Beat two thirds of the butter with the caster sugar until smooth and creamy.
- Add the flour and baking powder and mix well.
- Cover two baking trays with baking parchment.
- Take teaspoons of the mixture and place on the parchment.
- Flatten each ball of mixture slightly with the back of a fork, ensuring there is a gap between all the biscuits.
- Place into an oven at 180 degrees C for 15 minutes, or until the biscuits are golden.
- Cool slightly before transferring to a wire rack to cool completely.
- Meanwhile, take the remaining ingredients and beat together well to form the buttercream.
- Just before serving, sandwich the biscuits together using the buttercream.
