These muffins are both healthy and delicious, they are jam-packed with healthy ingredients to give a real boost for the day ahead. Have a baking session on a Sunday and make these for the rest of the week, but be warned, they are so delicious they may not last as long as you expect. The quantities shown in this recipe make 9 muffins.

Method

  1. Mix the flour, baking powder, seeds, sugar, orange zest and dried fruit in a large bowl.
  2. Add the oil, eggs and yoghurt and fold in.
  3. Spoon the mixture into the muffin cases and scatter the oats over the top.
  4. Place into an oven at 180 degrees C and Bake for 20 - 25 minutes, or until they have risen and are cracking slightly open on top.
  5. Remove from the oven and transfer to a wire rack to cool.
