This bread is fantastic, it's perfect served at a buffet or picnic and is delicious without anything extra needing to be added, although it does work very nicely with dips such as tapenade and houmous. There are lots of exciting bread mixes that you can use, I like to use a tomato and parmesan mix, but you could equally well use a herby, oilvy or garlicy bread, they would all taste delicious. As with all breads, this does take time to rise and bake, but the actual preparation time is minimal. The quantities shown in this recipe will serve approximately 6.
Ingredients
- 250g Bread mix
- 60g Mozzarella, sliced
- 40g Pepperoni or other salami, sliced
- 50g Cherry tomatoes, quartered
- 2 tbsp Fresh basil, chopped
Method
- Prepare the bread mix according to the instructions on the pack.
- Knead until a smooth dough is formed and leave to rest for 5 minutes.
- Roll out the dough to approximately 20cm by 15cm (don't be too worried about the exact measurement!).
- Scatter the remaining ingredients over the top of the dough.
- Roll the dough up to form a "swiss roll".
- Place the roll onto a greased baking tray and cover loosely with either a clean tea towel, or cling film.
- Leave in a warm place (the airing cupboard usually works well) for approximately 45 minutes, or until the dough has doubled in size.
- Uncover the dough and place the baking tray into an oven at 210 degrees C for approximately 35 minutes, or until the bread is well risen, golden in colour and sounds hollow when you tap the base.
- Remove from the oven and cool slightly on a cooling rack.
- Slice and serve when warm - delicious!
