I love peanut cookies, they were always a special treat when I went out for the day with mum and dad and ever since they have brought back good memories for me. They are incredibly quick and simple to prepare, and despite the fact that they are expensive in the shops the ingredients are all cheap. The quantities shown in this recipe make 40 cookies, which may sound like a lot, but believe me they will go fast! Oh yes, for any pedants out there, these cookies contain nuts - if you have a peanut allergy don't eat them!
Ingredients
- 100g Peanut butter
- 100g Butter, softened
- 100g Caster sugar
- 75g Soft brown sugar
- 225g Flour
- 1 tsp Baking powder
- 2 Eggs, beaten
- 2 handfuls Roasted peanuts
Method
- Mix all the ingredients apart from the roasted peanuts in a bowl to form a firmish dough.
- Divide the dough into 40 portions, and roll each into a ball.
- Squash each ball into a round on a greased baking tray and scatter the peanuts on top, squashing them gently into the top of the cookies.
- Place the cookies into an oven at 180 degrees C and bake for approximately 15 minutes, or until the cookies are starting to turn golden brown.
- Take the cookies off the baking tray and leave to cool on a cooling rack.
