Everyone I know loves chocolate sponge pudding, and this is the simplest recipe I have ever found, from start to finish it can be made in less than 10 minutes. I like to cheat even further by smothering the pudding with a bought chocolate sauce. You can either put a layer of sauce into the bottom of the cooking bowl, or you can drizzle the sauce over the pudding after cooking. As this dessert can be made in less than 10 minutes it really is built for speed and convenience. The quantities shown in this recipe serve 2.
Ingredients
- 25g Butter
- 2 Eggs
- 1 tbsp Cocoa powder
- 100g Ground almonds
- 3 tsp Caster sugar
Method
- Melt the butter in the microwave (this should take very little time).
- Whisk the butter with the eggs and add the remaining ingredients.
- Whisk well again, ensuring that plenty of air is in the mixture.
- Place the mixture (in a microwave-safe bowl) into the microwave and cook for 3 minutes on high.
- Leave the pudding to cool for a minute, before turning out and serving immediately.
