I love lamb chops, and this recipe uses the simplest of ingredients to really bring out all the flavours. It is a very easy recipe to prepare, and can be made very quickly (apart from the marinading time). Use fresh rosemary for this recipe, it is widely available, and although more expensive than the dried herb, you will really notice an improvement in the flavour of the finished dish. I liek to serve garlic and rosemary lamb chops with new potatoes, and plenty of steamed baby vegetables. The quantities shown here serve 2.
Ingredients
- 2 tbsp Olive oil
- Juice of 1 Lime
- 1 clove Garlic, finely chopped
- 1 tbsp Fresh rosemary, chopped
- 1 tsp Wholegrain mustard
- 4 Lamb chops
Method
- Mix the oil, lime juice, mustard and garlic together with the rosemary.
- Marinade the lamb chops in the lime mix for 2 - 3 hours in the refrigerator, mixing occasionally to ensure the chops are evenly coated.
- Grill the chops under a high heat for 5 - 10 minutes on each side, turning once.
- Drizzle any remaining marinade over the lamb, and cook for a further 2 minutes.
- Serve immediately.
