If you've got a food processor this will be one of the easiest meals you can make, and it's very tasty. The mint and onion dressing really peps up the meatballs, which can be barbecued on skewers if you choose. Depending on how spicy you like your food you can increase or decrease the amount of chilli that you include. If you don't have fresh mint available you can use mint sauce, use approximately 1 tsp of sauce for every tbsp of fresh mint. Serve the meatballs with rice, pasta or potatoes and a salad. This recipe serves 4.

Ingredients

Method

  1. Finely chop the onion and garlic in a food processor; the best way I have found to do this is to process the garlic and then add the onion.
  2. Remove ¼ of the onion and garlic and place into a serving dish.
  3. Add the chilli and 3 tbsp of the mint to the onion and garlic in the processor, and process until finely chopped.
  4. Add the lamb, salt, pepper and breadcrumbs to the food processor, and process until everything is well mixed.
  5. Form the lamb mixture into 32 balls, flouring your hands to prevent too much of the mixture sticking to you.
  6. Either place the balls onto skewers, or place into a grill pan and either grill or barbecue the meatballs for 15 - 20 minutes, or until they are browned all over and cooked through, turning occasionally.
  7. Mix the yoghurt with the remaining mint (chopped), onion and garlic that was set aside.
  8. Serve the meatballs with the yoghurt dressing drizzled over the top.
