When most people think of horseradish they automatically think of roast beef, however, horseradish is a far more versatile ingredient than this. In this recipe it makes a gentle but flavoursome sauce for homely casseroled chicken. This is a perfect recipe for those who want to lose weight; chicken has very little fat, and the sauce contains only minimal fat and no sugar. For the perfect low fat meal, serve with steamed new potatoes and broccoli. This recipe serves 2.
Ingredients
- 2 Skinless chicken breasts
- 250ml Chicken stock
- 15g Butter
- 1 tbsp Flour
- 3 tsp Creamed horseradish sauce
- Salt and ground black pepper
Method
- Fry the chicken breast until it is browned on both sides. Remove from the heat.
- Add the stock, butter and flour to the pan and stir until no lumps are present.
- Bring the sauce to the boil, stirring constantly. Allow to boil for 3 minutes and remove from heat. Add the remaining ingredients.
- Transfer the mixture to a casserole dish, and bake in an oven at 10 degrees C for 35 minutes.
