The combination of brie and fruit is well known, although it is usually paired with grapes, the tartness of cooking apples works very well with the creaminess of the cheese. Stuffed chicken breasts covered with melted cheese are bound to look fantastic, but this recipe combines that with delicious flavours. Be sure to add the herbs, as they add a pleasant roundness to the flavour. This recipe serves two. Serve this recipe with steamed new potatoes and either a salad or steamed vegetables.
Ingredients
- 2 Chicken breasts
- 1 Onion, finely chopped
- 1 Cooking apple, diced
- 2 tbsp Fresh sage, finely chopped
- 1 tbsp Fresh Thyme, finely chopped
- 4 tbsp Apple juice
- 1 Vegetable stock cube
- 75g Brie, sliced
Method
- Lightly fry the onion and apple.
- Add the apple juice, herbs and stock cube to the apple and onion and heat for approximately 5 minutes, until the apple juice has reduced and the mixture is thick.
- Make a pocket in the centre of each chicken breast, by slicing from one side, almost to the other.
- Place the stuffing inside the chicken breasts. Place the breasts onto a baking tray, and if skinless, drizzle with a little oil.
- Place the chicken into an oven at 180 degrees C for 20 minutes.
- Remove the chicken breasts from the oven and arrange the brie slices on the top. Return the chicken to the oven for a further 10 minutes, or until the chicken is cooked through and the brie is melted and bubbling. Serve immediately.
