This is one of those dishes that brings in the sun. It is exceedingly healthy, having a very low fat and sugar content, and is rich in vitamins and minerals. This dish is a favourite throughout Greece, where lemons are grown in abundance. Where possible, use organic chicken and organic vegetables, you will really notice an improvement in the flavour. The following quantities serve 2.
Ingredients
- 250g Chicken breast, diced
- Juice of 1 Lemon
- 1 Onion, chopped
- 2 Cloves of garlic, finely chopped
- 2 Carrots, sliced
- 1 Celery stick, sliced
- 150ml Vegetable or chicken stock
- 1 tbsp Fresh chopped thyme
Method
- Lightly fry the onion and garlic until softened. Add the chicken and fry until browned.
- Add the carrots and celery and fry for a further 2 minutes.
- Add the stock and chopped thyme and the lemon juice.
- Cover and cook over a low heat for a further 30 minutes. Serve immediately with fresh crusty bread.
