This recipe is full of flavour, the crunchy texture of the coating complements the succulence of the chicken to perfection. This is like a healthy version of chicken kiev, and both adults and children will be wanting more. What is even better is that it's incredibly low in fat and very simple to make. For optimum flavour use organic corn fed chicken and fresh herbs. The quantities shown here serve 2. Serve with new potatoes and either a salad or steamed vegetables.
Ingredients
- 3 tsp Fresh sage, chopped
- 3 tsp Fresh chives, chopped
- 2 tsp Fresh thyme, chopped
- 2 tsp Fresh rosemary, chopped
- 4 tbsp Breadcrumbs
- Juice of 1 large Lemon
- 1 tbsp Butter
- 2 Chicken breasts
Method
- Mix the herbs and breadcrumbs. Add half the lemon juice and mix well.
- Place the butter in with the remaining lemon juice, and heat to melt the butter.
- Coat the chicken breasts in the breadcrumb mixture and place on a baking tray.
- Pour the lemon butter over the top of the chicken.
- Cook the chicken breasts for 30 minutes at 180 degrees C, or until the chicken is cooked through and the breadcrumbs are golden brown. Serve immediately.
