This is a fantastic recipe for a dinner party. Everyone I know loves roast chicken, and it is very cheap for a nice meal, however, no one I know likes to carve the chicken. This recipe neatly provides the solution. The meal looks fantastic, is very simple, tastes delicious and doesn’t need carving! Serve this with all the traditional trimmings, roast potatoes and roast parsnip / carrots as well as cranberry or redcurrant sauce; your guests will be sure to love it and will feel like they’ve really been treated. The quantities shown in this recipe serve two.

  1. Make a deep slash into the chicken breasts parallel to the skin to form a pocket.
  2. Make up the stuffing as usual, and stuff into the pockets of the breasts.
  3. Place the bacon rashers onto the breasts, cutting into slices as necessary.
  4. Place the breasts into a small roasting tin and into an oven at 180 degrees C for 40 to 45 minutes, or until the skin is crispy and the chicken is cooked through. Serve immediately.
