What can be better than baked chicken with a crunchy cheesy coating! This is another one of those recipes that is incredibly easy to prepare, and yet has elegant and delicious results. As Parmesan cheese is so strongly flavoured, you only need to use a small amount of it, hence if you are trying to loose weight, but love cheese it is an ideal choice. The quantities shown here serve 2, but it's simple enough to increase it to serve as many as you need. Serve with steamed potatoes and organic vegetables.

  1. Place the crackers into a plastic bag and crush with a rolling pin (freezer bags work well).
  2. Add the black pepper, lime juice and Parmesan cheese and mix well.
  3. Brush the chicken breasts with the milk and coat with the cracker mixture.
  4. Place the coated chicken breasts onto a baking tray and dot with the butter.
  5. Place into an oven at 180 degrees C for 30 minutes, or until the chicken is cooked through.
  6. Serve the chicken breasts immediately, drizzled with the sweet chilli sauce.
