This is a delicious filling meal, which isn't too calorie rich. It is also quick and easy to prepare, making a nice workday meal which will be enjoyed by one and all. If you've somehow managed not to taste pesto, change that! You will love it! The following quantities serve 2. Nothing extra is needed to make this into a meal.

  1. Fry the onion and garlic lightly in any excess oil from the pesto.
  2. Boil the pasta for 10 – 15 minutes, until al dente in texture, add a little oil to the pasta to stop it sticking together.
  3. Slice the chicken thinly and add to the onion, fry until the chicken is cooked through.
  4. Chop the pepper and add to the chicken.
  5. Slice the mushrooms and add to the chicken. Fry for about 5 minutes, until the pepper has softened. If the food is sticking to the pan add a little water rather than oil, the steam will act like oil, but without the calories.
  6. Add the pesto to the chicken, and mix thoroughly.
  7. Drain the pasta, and add the chicken mix. Stir thoroughly.
  8. Serve immediately, with the grated cheese melting on top.
