This was the recipe that brought me around to the idea of marinading meat, and I have never looked back – I think that speaks for the satisfaction of this recipe. It is incredibly easy, and although the process of marinading takes time, you don't have to do anything while it is going on. This recipe involves nothing more complex than mixing and frying, and the results are delicious. Give it a go, you will enjoy it! Why not go totally South American, and serve with organic potatoes and sweetcorn. If you can find organic wine, I would recommend it. The following quantities serve 2.
Ingredients
- 3 Cloves garlic, finely chopped
- 1 Red chilli, finely chopped
- 1/4 tsp Ground allspice
- 1tbsp Chopped fresh oregano
- 1/4 tsp Ground cinnamon
- 1/2 tsp Ground cumin
- 1/2 tsp Ground coriander
- 100ml Red wine
- 2 Chicken breast fillets
Method
- Mix all ingredients except the chicken in a jug.
- Place the chicken in a small bowl, and pour the marinade over the top. Coat the chicken in the marinade and leave to marinate for at least 5 hours, preferably overnight, turning occasionally to ensure good coverage by the marinade.
- Fry the coated chicken in butter, over a medium heat for 15 – 20 minutes, or until the chicken is thoroughly cooked through and serve immediately.
