This is a tasty and wholesome dish. It is also very simple. Be aware that this dish isn’t suitable for a low fat diet, but is eminently suitable for a low carbohydrate diet such as the Atkins diet. The combination of garlic, mushrooms and cheese works very well with chicken, but if you don‘t like garlic, don’t add it! Serve with steamed new potatoes and fresh vegetables.   1. Make a slash in the top of the chicken breasts, and fill with the mushrooms and garlic.
  2. Dot the butter over the top and sprinkle with the grated cheese and parsley.
  3. Place onto a baking tray, and put in an oven at 180 degrees C for 30 minutes, or until the chicken is cooked through and the cheese has browned.
