I'm sure we have all been in the situation where there is half a turkey sitting in the fridge waiting to be eaten, and no-one can face another turkey sandwich. This is a great way to use up those leftovers and create something special. Believe it or not this recipe is incredibly simple and quick to prepare, making it ideal for a weekday meal. I like to serve it with a salad, preferably a green or red salad. The quantities shown in this recipe serve 2 as a main course.
Ingredients
- 1 clove Garlic, finely chopped
- 1 Yellow pepper, chopped
- 200g Sun-dried tomatoes, chopped
- 30g Black olives, pitted and halved
- 200g Cooked turkey, shredded
- 200g Spaghetti
- 4 tbsp Pesto
Method
- Fry the garlic and pepper over a medium heat until the pepper has softened.
- Cook the spaghetti according to the instructions on the packet (usually boil for about 10 minutes).
- Meanwhile, add the tomatoes, olives and turkey to the pepper and warm through.
- Drain the spaghetti and mix with the pesto and pepper mix.
- Serve immediately.
