I'm sure we have all been in the situation where there is half a turkey sitting in the fridge waiting to be eaten, and no-one can face another turkey sandwich. This is a great way to use up those leftovers and create something special. Believe it or not this recipe is incredibly simple and quick to prepare, making it ideal for a weekday meal. I like to serve it with a salad, preferably a green or red salad. The quantities shown in this recipe serve 2 as a main course.

Method

  1. Fry the garlic and pepper over a medium heat until the pepper has softened.
  2. Cook the spaghetti according to the instructions on the packet (usually boil for about 10 minutes).
  3. Meanwhile, add the tomatoes, olives and turkey to the pepper and warm through.
  4. Drain the spaghetti and mix with the pesto and pepper mix.
  5. Serve immediately.
