This is a delicious salad that works well as a starter or a main course. It looks fabulous and tastes exotic, making it perfect for a summer dinner party dish. Serve it with steamed new potatoes for a stylish meal or chunky chips for a family dinner. The quantities shown here serve 2 as a main course or 4 as a starter.
Ingredients
- 1 Papaya (look for the greener papaya)
- 1/2 Cucumber, chopped
- 50g Beansprouts
- 2.5 cm Ginger, peeled and finely chopped
- 1 clove Garlic, finely chopped
- 1 tsp Chilli sauce
- Juice of 1 Lime
- 2 tbsp Fresh coriander, chopped
- Salt and freshly ground Black pepper
- 200g Beef steak, sirloin works well
Method
- Peel and deseed the papaya and cut into matchstics.
- Add the papaya, cucumber and beansprouts to a salad bowl and toss well.
- Mix the garlic, lime juice, ginger, salt, pepper and chilli sauce and drizzle over the salad. Divide between serving dishes.
- Fry the steak over a high heat for approximately 2 minutes on each side (depending on how well done you like your beef).
- Slice the steak thinly and arrange the slices over the salad.
- Serve immediately with the coriander sprinkled over the top.
