This is a truly delicious salad which can either be served as a starter or a main course. It looks and tastes fantastic, and has the added advantage that it is incredibly low in calories. I like to serve this when fresh figs are at their best, their flavour really comes into its own when combined with the saltiness of feta and parma ham. When served as a starter this recipe serves 4, when served as a main course it serves 2.
Ingredients
- 2 tbsp Olive oil
- Juice of 1 Lemon
- 1 Red chilli, finely chopped
- 75g Mixed salad leaves, including rocket or watercress
- 4 Spring onions, sliced
- 100g Cherry tomatoes, halved
- 1 Yellow pepper, chopped
- 4 Ripe figs, halved
- 150g Feta cheese,diced
- 8 slices Parma ham
- Freshly ground black pepper
Method
- Mix the olive oil, lemon juice and chilli by shaking in a jar with a tightly fitting lid.
- Mix the salad vegetables and toss with the dressing.
- Arrange the salad onto the serving dishes.
- Place the ham, figs and feta cheese on top of the salad vegetables.
- Sprinkle with the black pepper and serve immediately.
