The combination of lemon juice and freshly ground black pepper works wonders on most poultry, it is particularly special, however, on turkey. This recipe is particularly good for those on a diet as it is filling and is very low in calories. The selection of vegetables I have chosen is my favourite, however, don't be limited by my choice and taste. I like to serve this with either crusty bread or new potatoes and butter. The quantities shown in this recipe serve 2 as a main course.
Ingredients
- 300g Turkey breast, cut into strips
- Juice of 2 Lemons
- Freshly ground Black pepper
- 2 sticks Celery, sliced
- 1 Yellow pepper, chopped
- 4 Spring onions, sliced
- 150g Cherry tomatoes, halved if necessary
- 1/3 Cucumber, chopped
- 7 Radishes, quartered
- 5 Lettuce leaves, ripped
Method
- Mix the turkey with half of the lemon juice, coating it thoroughly.
- Add black pepper (approximately 6 twists of the grinder!), and mix well. Leave to marinade for 20 minutes.
- Fry the turkey in a little oil for 10 minutes or until cooked through.
- Meanwhile mix the vegetables and cover with the remaining lemon juice. Add a few twists of black pepper.
- Serve with the turkey sprinkled over the salad.
