The combination of lemon juice and freshly ground black pepper works wonders on most poultry, it is particularly special, however, on turkey. This recipe is particularly good for those on a diet as it is filling and is very low in calories. The selection of vegetables I have chosen is my favourite, however, don't be limited by my choice and taste. I like to serve this with either crusty bread or new potatoes and butter. The quantities shown in this recipe serve 2 as a main course.

  1. Mix the turkey with half of the lemon juice, coating it thoroughly.
  2. Add black pepper (approximately 6 twists of the grinder!), and mix well. Leave to marinade for 20 minutes.
  3. Fry the turkey in a little oil for 10 minutes or until cooked through.
  4. Meanwhile mix the vegetables and cover with the remaining lemon juice. Add a few twists of black pepper.
  5. Serve with the turkey sprinkled over the salad.
