This is so simple to prepare and tastes delicious, particularly when eaten outside on a rug with the family. The fat content is remarkably low, as surprisingly little mayonnaise is used. Don’t save this just for picnics, it is a delicious store cupboard salad and as such it’s perfect for when friends come to visit unexpectedly. It can also be prepared up to a couple of days in advance and stored in the fridge. The quantities shown here serve 2 as part of a picnic.
Ingredients
- 100g Dried Pasta shapes
- 1 handful frozen Peas
- 1 handful frozen Sweetcorn
- ½ Red pepper, cut into chunks
- 3 Spring onions, sliced
- ½ tin Tuna chunks
- 1 tbsp Mayonnaise
- Juice of 1 Lemon
- Ground black pepper
Method
- Boil the pasta, peas and sweetcorn according to instructions. Drain and allow to cool.
- Mix all ingredients together and serve.
