This is a pleasant salad that makes a welcome colour variation to the usual green salad. In the past few years red lettuces have become more and more common in the supermarkets, and of course you can easily grow your own. If you can't get hold of the particular lettuces given in this recipe, feel free to use whatever you can get hold of. The dressing for this salad is very simple, and can be varied according to your taste. If you wish to use another dressing feel free! The quantities shown in this recipe serve 4 as a side salad.
Ingredients
- 1 Oakleaf lettuce
- 1 Radicchio
- 1 Red onion, chopped
- 125g Red cabbage
- 185g Beetroot, cooked
- 3tbsp Olive oil
- 1 tbsp Red wine vinegar
- Salt and Freshly ground black pepper
Method
- Break the lettuces into leaves.
- Dice the beetroot and shred the cabbage, add to the lettuce leaves.
- Add the onion to the lettuce and mix well.
- Mix the olive oil, vinegar and salt and pepper to taste. A good way to mix them is to place them all in a jar with a tight fitting lid and shake well.
- Drizzle the dressing over the salad and serve immediately.
