What could be more luxurious than a salad incorporating salmon and asparagus? Both are delicacies, and both are delicious, with subtle flavours that combine well together. Eating both salmon and asparagus makes you feel very rich and regal, and yet you also can be smug in the knowledge that actually this is a very healthy meal - all in all it's perfect! The quantities shown in this recipe serve 2 as a main meal when served with new potatoes.
Ingredients
- 250g Salmon fillets
- 100g Asparagus tips
- 1/3 Cucumber, cut into chunks
- 100g Cherry tomatoes, halved
- 100g mixed Salad leaves, ripped
- 3 Spring onions, sliced
- 2 sticks Celery, sliced
- Juice of 2 Lemons
- 2 tbsp Olive oil
Method
- Steam the salmon fillets for 10 - 15 minutes, or until thoroughly cooked.
- Steam the asparagus tips for 5 minutes, or until cooked.
- Mix the vegetables together in a large bowl.
- Mix the lemon juice and oil in a tightly sealed jar.
- Flake the salmon fillets and add to the vegetables.
- Add the asparagus to the salad, and drizzle the dressing over the top. Serve immediately.
