Break with tradition and serve fish with orange instead of lemon. The slightly sweeter flavour of the oranges complements the smoked salmon well and the acidity works well with the salad. Serve this as a starter to a relatively heavy meal, as it is very light and refreshing. This recipe can be prepared up to an hour in advance, as long as it is kept covered and chilled. The quantities shown in this recipe serve 4 as a starter.
Ingredients
- 1 Orange, peeled and thinly sliced
- 100g Mixed salad leaves
- 1/4 Cucumber, thinly sliced
- Juice of 2 Oranges
- 2 tbsp Olive oil
- Salt and Freshly ground black pepper
- 300g Smoked salmon
Method
- Mix the salad leaves, cucumber and orange slices in a bowl.
- Mix the orange juice, oil and salt and pepper, by shaking well in a jar with a screw-top lid.
- Drizzle the dressing over the salad and toss well to mix.
- Arrange the salmon slices on to the serving plates, and scatter the salad over the top.
- Either serve immediately, or cover and chill until required.
