This is a very flavoursome side salad, the leaves are attractive and flavoursome on their own. Watercress in particular has a delicious peppery taste and is incredibly good for you, containing many essential vitamins and minerals. If you don't like these leaves, feel free to replace them with any of your own choice, as the vinaigrette works well with all salad vegetables. I like to serve this as a side dish, either at a barbeque, picnic or with roasted meats. The quantities shown here serve 8 as a side salad.
Ingredients
- 100g Lambs Lettuce
- 100g Watercress
- 100g Lollo rosso
- 2 cloves Garlic, finely chopped
- 2 tsp Wholegrain mustard
- 2 tbsp Cider vinegar
- 3 tbsp Olive oil
- 2 tsp Sugar
Method
- Rinse the salad leaves and mix.
- Mix the garlic, mustard, vinegar, olive oil and sugar in a jar with a tightly fitting lid. Shake well.
- Drizzle the dressing over the salad leaves and serve immediately.
