Wow! I just love this salad, and of course because it's a salad, it's nutritious, good for you and relatively cheap, as well as being delicious! What is more is that it's easy to prepare and looks fantastic. If you're serving this salad as a starter for a dinner party remember that the quantities shown in this recipe serve 2 as a main course, so would probably serve 4 for a dinner party. If you want to make it look really special, make up the salad without the leaves, and place them instead onto the plates (forming a lettuce “plate”) then place the remaining salad inside the lettuce plate. For a main meal, serve this recipe with steamed new potatoes drizzled with melted butter.

  1. Marinade the chicken in the lime juice, olive oil, garlic, chilli, sugar and cumin for at least 30 minutes.
  2. Meanwhile mix the salad ingredients.
  3. Remove the chicken strips from the marinade and lightly fry for 5 – 10 minutes (depending on the thickness of the strips), until the chicken is browned and cooked through.
  4. Gently heat the marinade and reduce down slightly.
  5. Serve the salad with the marinade drizzled over the top and the chicken strips sprinkled on top of the salad.
