Wow! I just love this salad, and of course because it's a salad, it's nutritious, good for you and relatively cheap, as well as being delicious! What is more is that it's easy to prepare and looks fantastic. If you're serving this salad as a starter for a dinner party remember that the quantities shown in this recipe serve 2 as a main course, so would probably serve 4 for a dinner party. If you want to make it look really special, make up the salad without the leaves, and place them instead onto the plates (forming a lettuce âplateâ) then place the remaining salad inside the lettuce plate. For a main meal, serve this recipe with steamed new potatoes drizzled with melted butter.
Ingredients
- 2 Chicken breasts, thinly sliced
- Juice of 2 limes
- 2 cloves Garlic, finely chopped
- 1 tsp Chilli sauce (or as much / little as you want)
- 1/2 tsp Sugar
- 1/4 tsp Cumin
- Olive oil
- 1/3 Cucumber, chopped
- 8 Cherry tomatoes, halved
- 1 large Dessert apple, diced
- Selection of Lettuce leaves
- 4 Spring onions, sliced
- 1 Yellow pepper, chopped
Method
- Marinade the chicken in the lime juice, olive oil, garlic, chilli, sugar and cumin for at least 30 minutes.
- Meanwhile mix the salad ingredients.
- Remove the chicken strips from the marinade and lightly fry for 5 â 10 minutes (depending on the thickness of the strips), until the chicken is browned and cooked through.
- Gently heat the marinade and reduce down slightly.
- Serve the salad with the marinade drizzled over the top and the chicken strips sprinkled on top of the salad.
