Everyone knows that salads are good for you, and this one, even with potato, bacon and cheese is no exception. Spinach is very nutritions, containing large quantities of vitamins C and E and also plenty of fibre, making this salad perfect for those on a diet. The quantities shown in this recipe serve 2.

Method

  1. Steam the potato slices for 15 minutes, or until cooked through.
  2. Grill the bacon rashers until cooked through.
  3. Mix the spinach, tomatoes and onion.
  4. Chop the bacon into bite-sized pieces and mix with the potato slices.
  5. Combine the potato and bacon mix with the vegetables and divide the mixture between the serving plates.
  6. Mix the olive oil and vinegar together and drizzle over the salad.
  7. Scatter the parmesan shavings over the top and serve immediately.
