Everyone knows that salads are good for you, and this one, even with potato, bacon and cheese is no exception. Spinach is very nutritions, containing large quantities of vitamins C and E and also plenty of fibre, making this salad perfect for those on a diet. The quantities shown in this recipe serve 2.
Ingredients
- 150g Bacon
- 200g Spinach leaves, trimmed
- 150g New potatoes, sliced
- 6 Cherry tomatoes, quartered
- 3 Spring onions, sliced
- 1 tbsp Olive oil
- 3 tsp Balsamic Vinegar
- 50g Parmesan shavings
Method
- Steam the potato slices for 15 minutes, or until cooked through.
- Grill the bacon rashers until cooked through.
- Mix the spinach, tomatoes and onion.
- Chop the bacon into bite-sized pieces and mix with the potato slices.
- Combine the potato and bacon mix with the vegetables and divide the mixture between the serving plates.
- Mix the olive oil and vinegar together and drizzle over the salad.
- Scatter the parmesan shavings over the top and serve immediately.
