This is one of those salads that kids love, the name comes from the colours of the ingredients (unsurprisingly) making it a colourful and exciting salad. You can vary the recipe as you prefer, I use the vinaigrette shown, but feel free to vary it. This salad is ideal served at a picnic or barbecue, but can equally well be served as a side salad or lunch. it works particularly well as a packed lunch variation to sandwiches. You can use either brown or white rice, personally I prefer the nuttier brown rice. The quantities shown in this recipe serve 4 as a side salad.
Ingredients
- 100g Rice, uncooked
- 1 handful frozen Peas
- 1 handful frozen Sweetcorn
- 100g Cherry tomatoes, quartered
- 3 Spring onions, sliced
- Juice of 1 Lemon
- 1 clove Garlic, crushed
- 2 tbsp Olive oil
- Salt and Freshly ground black pepper
Method
- Rinse the rice, and place in boiling water, simmer for 15 - 20 minutes.
- Add the peas and sweetcorn to the rice, and simmer for a further 10 minutes.
- Drain the rice and allow it to cool, meanwhile, prepare the dressing.
- Mix the lemon juice, oil, and garlic in a jar with a tight fitting screw-top lid. Shake well to mix.
- Add the tomatoes and spring onions to the rice and mix well.
- Cover with the dressing, add salt and pepper as required and serve.
