This is a classic salad with delicious complementary flavours. Try to use a good quality olive oil, as this will significantly enhance the flavours. Traditionally you are supposed to add capers to this salad, however, I'm not a big fan of capers so I've not added any to this recipe. If you do want to add some, you will probably need about a tablespoon full. The quantities shown in this recipe serve 2.
Ingredients
- 225g New potatoes, cut into bite-sized pieces
- 75g French beans, or Green beans, topped and tailed
- 2 Eggs
- 100g Cherry tomatoes, halved
- 10cm Cucumber, chopped
- 100g Tinned tuna
- 15g Black olives, pitted and halved
- 3 tbsp Olive oil
- 2 tbsp Cider vinegar
- Pinch Mustard powder (or a little mustard if you don't have powder)
- Pinch Sugar
Method
- Steam the potatoes for 10 - 15 minutes, or until cooked through.
- Steam the beans for 5 minutes, until tender.
- Boil the eggs for 6 minutes (boiling for all the 6 minutes!) and rinse in cold water.
- Peel the eggs, and cut into quarters.
- Mix the eggs, beans, potatoes, tuna, cucumber, and olives.
- Mix the oil, vinegar, mustard and sugar together well and drizzle over the salad.
