This is a classic salad with delicious complementary flavours. Try to use a good quality olive oil, as this will significantly enhance the flavours. Traditionally you are supposed to add capers to this salad, however, I'm not a big fan of capers so I've not added any to this recipe. If you do want to add some, you will probably need about a tablespoon full. The quantities shown in this recipe serve 2.

  1. Steam the potatoes for 10 - 15 minutes, or until cooked through.
  2. Steam the beans for 5 minutes, until tender.
  3. Boil the eggs for 6 minutes (boiling for all the 6 minutes!) and rinse in cold water.
  4. Peel the eggs, and cut into quarters.
  5. Mix the eggs, beans, potatoes, tuna, cucumber, and olives.
  6. Mix the oil, vinegar, mustard and sugar together well and drizzle over the salad.
