This is a deliciously fresh chilled soup, that is ideal served as a starter, or alternatively as a light lunch. This is also incredibly healthy, being packed full of vegetables, with a hint of spiciness for flavour. The quantities shown here serve 6. If desired, you can serve it with crushed ice in glasses.
Ingredients
- 2 Leeks, sliced
- 4 cloves Garlic, finely chopped
- 2 tsp Cumin
- 1L Vegetable stock
- 20g Fresh coriander, stems removed and reserved
- 3 Avocados
- 2 Tomatoes, chopped
- Juice of 1/2 Lime
- Salt and Freshly ground black pepper
- 150ml Natural yoghurt
Method
- Lightly fry the leeks and garlic in a little oil or butter.
- Add the cumin and a little stock, and cover and heat gently for approximately 15 minutes.
- Add the remaining stock and the coriander stalks and simmer for a further 15 minutes.
- Add the avocado flesh and tomatoes, and heat for a further 5 minutes.
- Allow to cool slightly and blend to a smooth soup adding a little water if necessary.
- Add the lime juice and seasoning and allow to cool completely.
- Serve the soup topped with a swirl of yoghurt.
