This is a deliciously fresh chilled soup, that is ideal served as a starter, or alternatively as a light lunch. This is also incredibly healthy, being packed full of vegetables, with a hint of spiciness for flavour. The quantities shown here serve 6. If desired, you can serve it with crushed ice in glasses.

Method

  1. Lightly fry the leeks and garlic in a little oil or butter.
  2. Add the cumin and a little stock, and cover and heat gently for approximately 15 minutes.
  3. Add the remaining stock and the coriander stalks and simmer for a further 15 minutes.
  4. Add the avocado flesh and tomatoes, and heat for a further 5 minutes.
  5. Allow to cool slightly and blend to a smooth soup adding a little water if necessary.
  6. Add the lime juice and seasoning and allow to cool completely.
  7. Serve the soup topped with a swirl of yoghurt.
