If you've tried this soup from a packet or tin and enjoyed it, may I suggest you try this recipe. It is cheap, simple and delicious, as well as having a far lower salt content than commercially available soups. This soup is easily special enough to serve as a starter at a dinner party, whilst being satisfying enough to serve as a main meal with delicious crusty rolls. If the flavour of Stilton is not to your liking any other cheese can be used; if it is a milder cheese you may need to increase the quantity slightly. The following quantities serve 4.
Ingredients
- 2 Onions, chopped
- 40g Butter
- 450g Broccoli, trimmed and chopped
- 600ml Vegetable stock
- 60g Stilton, broken into pieces
- 150ml Single cream (optional)
- Ground black pepper
Method
- Gently fry the onions in the butter until soft. Add the broccoli and stir for 2 minutes.
- Add the stock to the pan and boil the soup for 20 minutes.
- Liquidise the soup and return to the pan.
- Gently heat the soup and add the crumbled Stilton, heat gently until the Stilton has melted. Season to taste with the black pepper.
- Transfer to serving dishes, and finish with a swirl of cream.
