If you've tried this soup from a packet or tin and enjoyed it, may I suggest you try this recipe. It is cheap, simple and delicious, as well as having a far lower salt content than commercially available soups. This soup is easily special enough to serve as a starter at a dinner party, whilst being satisfying enough to serve as a main meal with delicious crusty rolls. If the flavour of Stilton is not to your liking any other cheese can be used; if it is a milder cheese you may need to increase the quantity slightly. The following quantities serve 4.

  1. Gently fry the onions in the butter until soft. Add the broccoli and stir for 2 minutes.
  2. Add the stock to the pan and boil the soup for 20 minutes.
  3. Liquidise the soup and return to the pan.
  4. Gently heat the soup and add the crumbled Stilton, heat gently until the Stilton has melted. Season to taste with the black pepper.
  5. Transfer to serving dishes, and finish with a swirl of cream.
