This is a delicious and refreshing summer soup that works well as a warming supper. The addition of ginger to carrots creates a slightly spicy flavour making it warming. The addition of a little honey really peps up the flavour, making it into something special that can easily be served as a dinner party starter. This soup is very simple to prepare, and if necessary can be prepared in advance and reheated after it has been liquidised. This recipe serves 2 as a main meal.
Ingredients
- 1 Onion, chopped
- 250g Carrots, peeled and sliced
- 4cm Fresh ginger, finely chopped
- 500ml Vegetable stock
- 1 tsp Clear honey
Method
- Fry the onion in a little oil until it is translucent (approximately 5 minutes).
- Add the remaining ingredients and simmer for 15 - 20 minutes, or until the carrots are tender.
- Cool the soup slightly and place into a liquidiser.
- Liquidise the soup and return to the pan.
- Reheat the soup and serve immediately.
