This is a delicious and refreshing summer soup that works well as a warming supper. The addition of ginger to carrots creates a slightly spicy flavour making it warming.   1. Fry the onion in a little oil until it is translucent (approximately 5 minutes).
  2. Add the remaining ingredients and simmer for 15 - 20 minutes, or until the carrots are tender.
  3. Cool the soup slightly and place into a liquidiser.
  4. Liquidise the soup and return to the pan.
  5. Reheat the soup and serve immediately.
