This soup is very much a family favourite, it is filling and flavoursome, as well as being nutritious. If you've tried the tinned version, then I would like to encourage you to have a go at making this, it is quick to prepare, and very satisfying to be able to serve home made soup. You will find the flavour superior to tinned soups, and much less salty. The quantities shown in this recipe serve 2 as a main meal when served with crusty bread.
Ingredients
- 1 Onion, chopped
- 50g Bacon, diced
- 2 cloves Garlic
- 1 stick Celery, sliced
- 1 Carrot, sliced
- 1/2 Leek, sliced
- 50g Cabbage, shredded
- 2 Tomatoes, chopped
- 500ml Beef stock
- 30g Tinned haricot beans
- 25g Small pasta shapes
Method
- Dry fry the onion, garlic and bacon in a sauce pan for 5 minutes, or until the bacon is browned and cooked through.
- Add the vegetables, beans, pasta shapes and stock and simmer for 20 minutes.
- Serve immediately.
