Balsamic onion bruschetta is an absolutely delicious starter. By cooking the onions slowly, all the carbohydrates turn to sugar, making this incredibly sweet. When combined with the flavour of the balsamic vinegar the taste is unbeatable. By sprinkling a little crumbled goats cheese or stilton over the top the flavour sensation is complete. I like to serve this as a starter with a green salad. The quantities shown in this recipe serve 4.
Ingredients
- 4 Red onions, chopped
- 2 tbsp Olive oil
- 6 tbsp Balsamic vinegar
- 4 slices Bloomer loaf
- 150g Goats cheese
Method
- Fry the onions over a medium heat for 20 minutes, stirring occasionally.
- Add the vinegar to the onions, and fry for a further 20 minutes, stirring occasionally.
- Toast the bread until golden brown.
- Divide the onion between the bread slices and top with the cheese.
- Serve the bruschetta with a green salad.
