I love the sweet savory flavour of freshly podded broad beans. There is something really special about releasing the beans from their pod. The combination of the creamy texture of teh beans works well with the slightly salty taste of the crab, and with an extra zing of garlic and lemon these crostini are a fantastic starter for any meal. The quantities shown in this recipe serve 6 as a starter.
Ingredients
- 1 Ciabatta, cut into chunky slices
- 400g Broad beans
- 2 cloves Garlic, finely chopped
- 2 tbsp Fresh mint, chopped
- Juice of 1 Lemon
- Freshly ground black pepper
- 5 tbsp Oil
- 200g Fresh white crab meat
Method
- Steam the broad beans for 5 minutes.
- Lightly toast the ciabatta slices.
- Mix the beans with the mint, garlic, freshly ground black pepper and half the lemon juice.
- Drizzle 3/4 oil over the bean mix, and mash roughly.
- Divide the bean mixture between the toasted ciabatta slices, and top with the crab meat.
- Drizzle the remaining oil and lemon juice over the top, and finish with a sprinkling of ground black pepper.
