Halloumi is a cheese that in my opinion doesn't taste very nice raw, but when cooked is delicious. It has a fantastic texture, and the flavour works really well with summer vegetables such as tomatoes and peppers. This dish is incredibly simple, being just a slice of cheese in peppers cooked and then covered with a dressing, but the results look and taste absolutely fantastic. I like to serve these with a simple side salad and some crusty bread to soak up the juices. The quantities shown in this recipe serve 4.
Ingredients
- 2 Peppers, cut in half lengthways and then cored, to form boats
- 200g Halloumi cheese, cut into 4 slices
- 2 tbsp Pine nuts
- Juice of 1 lemon
- 1 clove Garlic, finely chopped
- 1 Chilli, finely chopped
- 2 tbsp Olive oil
- 2 tbsp Fresh basil, finely chopped
Method
- Place the peppers into a baking tray and drizzle with a little olive oil.
- Place into an oven at 180 degrees C for 15 minutes.
- Remove the pepper boats from the oven and place a slice of cheese in each.
- Sprinkle the pine nuts over the pepper boats.
- Return the boats to the oven for 10 minutes, or until the cheese is golden and the pine nuts are toasted.
- Mix the remaining ingredients well.
- Remove the peppers from the oven and place onto serving dishes.
- Drizzle the dressing over the top and serve immediately.
