i'm never sure what to call this as a starter, all I know is, it's simple to prepare and absolutely delicious - the freshness of the melon works extremely well with the flavour of the ham and cheese. I like to use a creamy blue cheese such as rosenbourg, but you can use just about any cheese you prefer. The quantities shown here serve 6.

Method

  1. Mix the melon, ham and cheese.
  2. Whisk the lemon juice and olive oil together and drizzle over the melon mix.
  3. Serve immediately.
