i'm never sure what to call this as a starter, all I know is, it's simple to prepare and absolutely delicious - the freshness of the melon works extremely well with the flavour of the ham and cheese. I like to use a creamy blue cheese such as rosenbourg, but you can use just about any cheese you prefer. The quantities shown here serve 6.
Ingredients
- 1 Galia melon, diced, or balled
- 6 slices Parma ham, cut into strips
- 150g Cheese, diced
- Juice of 1 lemon
- 3 tbsp Olive oil
Method
- Mix the melon, ham and cheese.
- Whisk the lemon juice and olive oil together and drizzle over the melon mix.
- Serve immediately.
