This salad looks absolutely fantastic, and is a very unusual, but delicious starter. I like to serve this with a fresh crusty roll, so that guests can mop up the juices. Although the citrus usually served with shellfish is lemon, the grapefruit makes a delicious and refreshing alternative. The quantities shown in this recipe serve 4.

Method

  1. Mix the prawns and leaves in a bowl.
  2. Cut the grapefruit in half, and remove the segments, mix the segments with the prawns.
  3. Dice the avocado flesh and mix with the salad.
  4. Serve with the pine nuts scattered over the top.
