This salad looks absolutely fantastic, and is a very unusual, but delicious starter. I like to serve this with a fresh crusty roll, so that guests can mop up the juices. Although the citrus usually served with shellfish is lemon, the grapefruit makes a delicious and refreshing alternative. The quantities shown in this recipe serve 4.
Ingredients
- 300g Prawns, cooked and peeled
- 150g Mixed lettuce leaves
- 2 Grapefruit, 1 pink, 1 yellow if possible
- 2 Avocados
- 2 tbsp Pine nuts
Method
- Mix the prawns and leaves in a bowl.
- Cut the grapefruit in half, and remove the segments, mix the segments with the prawns.
- Dice the avocado flesh and mix with the salad.
- Serve with the pine nuts scattered over the top.
