This is a deliciously tropical way to serve prawns as a starter. It is very healthy, being low in fat and sugar, and high in vitamins and minerals from both the fruit and prawns. The combination of the acidity and heat of the salsa, along with the freshness of the prawns works really well. If you don't wnat it quite so spicy you can easily decrease the amount of chilli in the recipe. This starter is easily special enough to serve at a special meal. Ingredients
- 1 Mango, peeled, stoned and diced
- 1/2 Red onion, chopped
- 1/2 Red chilli, deseeded and finely chopped
- 2 tbsp Fresh coriander, roughly chopped
- 4 Cherry tomatoes, chopped
- Juice of 1 Lemon
- Freshly ground black pepper
- 1 Avocado, cut in half and stoned
- 4 Prawns, cooked
Method
- Mix the mango, onion, chilli, 3/4 of the coriander and tomatoes in a bowl.
- Add the oil, half the lemon juice and the black pepper to the mango mix, and stir well.
- Arrange the salsa in the avocado halves and top with the prawns.
- Drizzle the remaining lemon juice over the top, and scatter the remaining coriander leaves over the top. Serve immediately.
