This makes a delicious supper, especially when you are settled comfortably in front of a roaring fire. This is definitely feel-good food. The end result feels like scones turned into a meal, spread with butter they are very toothsome. Forget the diet and the calorie counting for one evening, this is food heaven. Serve with a green or tomato salad. The following quantities serve 2.
Ingredients
- 50g Bacon, chopped
- 1 Small leek, chopped
- 125g Self raising flour
- 1/2 tsp Baking powder
- Salt and ground black pepper
- 25g Butter
- 25g Cheese (Preferably Caerphilly cheese to get the traditional Welsh flavour)
- 1 Egg
Method
- Fry the bacon in it's own fat until cooked through.
- Add the leek to the bacon and fry for a further 5 minutes, or until the leek has softened. Remove from the heat.
- Mix the flour, baking powder and seasoning in a bowl, add the egg and mix to form a soft dough.
- Add the leek and bacon.
- Knead the dough lightly and divide into 4 portions.
- Roll out each portion of dough into a round approximately 1cm deep.
- Fry each cake over a medium heat until it is golden on both sides (approximately 4 – 5 minutes per side).
- Place the cakes onto a baking tray, and bake at 10 degrees C for 5 minutes.
- Split each cake and spread with butter. Serve immediately.
