This is a very traditional French dish which is frequently on sale in continental markets. If you happen to pop over to France and see this for sale it is really worth trying. On the other hand, it is easy to prepare, cheap and delicious, so why not just make it yourself? It is comfort food at its best, filling, warm and delicious. If you can't get hold of the suggested cheeses try using cheddar / gruyere, or whatever you have in the fridge - as long as it's a cheese that can be cooked and melts well it will work in this recipe. This recipe serves 2 as a supper dish.
Ingredients
- 3 - 4 Potatoes, peeled and sliced (about 3mm thick)
- 100g Bacon, cut into pieces
- 1 Onion, chopped
- 75g Emmental, grated
- 75g Raclette, grated
- 75g Creme fraiche
- Salt and Freshly ground black pepper
Method
- Dry fry the bacon and onion until the onion has softened and the bacon is thoroughly cooked.
- Add the potatoes to the frying pan and just cover with boiling water. Simmer for 10 - 15 minutes, or until the potato has softened. Drain until only about 1/2 cm water remains in the pan.
- Add the cheese and creme fraiche to the potato, and stir, allowing the cheese to melt and mix with the water and creme fraiche to form a sauce. If necessary heat to thicken the sauce. Season as necessary.
- Serve immediately.
