If you love cheese, but are watching your weight then consider using blue cheese, because it's flavour is so strong, you only need to use a little. That said, this is definitely not a meal for those who are watching their weight, but it is delicious, so treat yourself! The following quantities serve 4 as a main course, but this is ideal buffet or picnic food, so don't just save it for main meals. The vegetables that have been used are my suggestions, so please don't feel restricted by them.

  1. Scatter the vegetables on a baking tray and drizzle with olive oil. Roast at 200 degrees C until the vegetables are just tender.
  2. Divide the pastry in two and roll out each half until it is ½ cm thick.
  3. Place one piece of the pastry onto a baking tray and scatter the blue cheese over the top, leaving a small border around the edge.
  4. Remove the roasted vegetables from the oven and pat gently with kitchen paper to remove any excess oil. Scatter the vegetables over the cheese and pastry.
  5. Cut diagonal slits in the second piece of pastry, leaving a 1 cm border around each edge.
  6. Brush the edges of the bottom sheet of pastry with milk, and place the top sheet on top, sealing the edges together with your fingertips.
  7. Brush with the remaining milk and place into the hot oven. Bake at 200 degrees C for 20 minutes, or until the pastry is golden brown and risen. Serve with a green salad.
