Broccoli and blue cheese is a delicious combination that works well with pasta. Serve this dish with a red salad to provide some variety of colour. It has to be said that this isn't a good dish for those on a diet, however it is comfort food at it's best, and is great for eating with friends on a cold winters evening. I like to use stilton for this recipe, however any blue cheese works well. The quantities shown in this recipe serve 4.
Ingredients
- 250g Broccoli
- 300g Dried pasta shapes
- 150ml Natural Yoghurt
- 100g Marscapone cheese
- 180g Blue cheese
- Freshly ground black pepper
Method
- Separate the broccoli into florets and steam for 15 minutes, or until the broccoli is firm but cooked.
- Cook the pasta according to the instructions (usually boil for about 10 minutes).
- Place the broccoli into a pan, along with the yoghurt, marscapone and blue cheese.
- Heat the broccoli mixture until the cheese has melted, stir well to mix.
- Drain the pasta and mix with the sauce, seasoning with the pepper as required.
