This is a delicious and healthy way to recreate that holiday feeling at home. Preferably serve this dish to friends and family on a summers day with crusty bread and a green salad. Eat this in the traditional Greek way; with a nice glass of wine and the conversation flowing. The preparation is quick and simple, so you can enjoy your guests company while the meal is cooking. The following quantities serve 2.
Ingredients
- 1 Bunch of spring onions
- 150g Cherry tomatoes
- 40g Black olives
- 200g Feta Cheese
- 1 tbsp Fresh chopped thyme
- 1 Thick slice of bread
- 2 Large bell peppers
Method
- Using a food mixer turn the slice of bread into breadcrumbs.
- Add the onions, tomatoes, olives, feta cheese, and thyme and process until the stuffing is well mixed.
- Core the peppers and cut in half to form 'boats'.
- Fill the pepper boats with the stuffing mixture and place in a greased casserole dish.
- Place in an oven and bake at 180 degrees C for 20 – 25 minutes, or until the peppers have softened and the stuffing is golden. Serve immediately.
