An omelette is the ultimate in fast food. They are filling, healthy and delicious. This omelette is filled with a delicious mixture of ingredients to make it extraordinarily special. Serve it with a dressed green salad for a toothsome supper. Vary the fillings according to your taste. The quantities shown serve 2.
Ingredients
- 50g Butter
- 1 small Onion, cut into chunks
- A handful of peas
- 10 Cherry tomatoes, halved
- 6 Baby new potatoes, cut into chunks
- 4 Eggs, beaten
- Black pepper
- 100g Cheese, grated
Method
- Lightly fry the onion in the butter until softened, add the peas and new potatoes and fry for a further 10 minutes, stirring frequently.
- Add the tomatoes, and fry for a further couple of minutes.
- Mix the pepper into the egg, and pour over the vegetables. Fry on a medium heat for approximately 5 minutes, or until the egg starts to set.
- Cover the omelette with the grated cheese, and cook until the cheese has melted. Serve immediately.
