This meal makes a fabulous alternative to boring baked potatoes - there is something about the crispy baked skin, with a generous lashing of butter and cheese that really makes them special. Adding tomatoes and onion really gives a zing to the meal. These are ideal served at barbeques or alternatively as a healthier alternative to chips / hot dogs on bonfire night. For a snack use half a potato per person, for something more substantial use a whole potato per person. The quantities shown in this recipe serve 8 as a snack.
Ingredients
- 4 Baking potatoes, scrubbed and pricked
- 150g Mature cheddar cheese, grated
- 20g Butter
- 4 Spring onions, chopped
- 125g Cherry tomatoes, quartered
Method
- Place the potatoes into an oven at 180 degrees C and bake for 1 hr 30 minutes.
- Remove the potatoes and cut in half.
- Scoop the flesh from the potatoes and mix with the butter, cheese, tomatoes and onions.
- Fill the potato shells with the cheese mixture and return to the oven.
- Bake for 10 - 15 minutes until the cheese has melted and the filling has crisped up on top.
- Serve immediately.
