This meal makes a fabulous alternative to boring baked potatoes - there is something about the crispy baked skin, with a generous lashing of butter and cheese that really makes them special. Adding tomatoes and onion really gives a zing to the meal. These are ideal served at barbeques or alternatively as a healthier alternative to chips / hot dogs on bonfire night. For a snack use half a potato per person, for something more substantial use a whole potato per person. The quantities shown in this recipe serve 8 as a snack.

  1. Place the potatoes into an oven at 180 degrees C and bake for 1 hr 30 minutes.
  2. Remove the potatoes and cut in half.
  3. Scoop the flesh from the potatoes and mix with the butter, cheese, tomatoes and onions.
  4. Fill the potato shells with the cheese mixture and return to the oven.
  5. Bake for 10 - 15 minutes until the cheese has melted and the filling has crisped up on top.
  6. Serve immediately.
